The lipid composition, presence of the biologically active substances and ability lipids to spontaneous aggregation in water medium winter garlic (Allium sativum L.) was studied by TLC, UV-spectrometry with Gauss mathematic analysis spectra dynamic light scattering methods It is shown that share more easily oxidizable fractions phospholipids 2.45 times greater than for poorly fractions.
